UPSIDE-DOWN DATE CAKE
1 cup pitted dates, cut up
1 cup boiling water
½ cup white sugar
½ cup brown sugar
1 egg
2 tablespoon butter, melted
1 ½ cup flour
½ teaspoon baking powder
½ teaspoon salt
1 cup walnuts, chopped
Sauce:
1 ½ cup brown sugar
1 tablespoon butter
1 cup boiling water
Combing the dates and boiling water. Set aside to cool. Blend sugars, egg and butter. Sift dry ingredients and add to the sugar mixture. Stir in nuts and cooled dates. Pour into an 8” square pan. Combine the sauce ingredients and pour over the cake. Bake at 375 degrees for 40 minutes. This is delicious warm or cold.
