The Fenton History Center has an extensive collection of local cookbooks in its archives. This recipe comes from Home Cookin’, Sears Associates’ Favorite Recipes. The Sears Roebuck Store was originally in downtown Jamestown, and moved to the newly built Chautauqua Mall in 1970, The cookbook was published in 1997, and all proceeds were donated to the St. Susan Center. This recipe was submitted by Marsha Barton.
SCALLOPED SWEET POTATOES
1 9” prepared graham cracker crust
2 cup peeled, thinly sliced sweet potatoes or yams
1 orange, sliced thin and cut into small pieces
1 T. brown sugar
1/3 cup orange juice
¼ teaspoon pumpkin pie spice
Pinch of cinnamon
Pinch of nutmeg
1 tablespoon maple syrup
1 tablespoon butter
Preheat oven to 425 degrees. Cover the bottom of the pie crust with single, overlapping layer of potatoes. Top with a layer of orange pieces, Repeat layers, ending with potatoes In a small bowl, stir sugar into the orange juice. Pour over the top of the potatoes. Sprinkle with spices. Cover and bake for 1 hour. Uncover and drizzle with the maple syrup and dot with butter. Bake 15 minutes more. Makes 4 servings.
