The Fenton History Center has an extensive collection of local cookbooks in its archives. This recipe comes from Wholly Hurlbut!, recipes contributed by members and friends of Hurlbut Memorial Community Church at Chautauqua Institution. The book was compiled and offered by the Hurlbut United Methodist Women in 1992 This recipe was submitted by Amy Weaver.
ALMOND SQUARES
3 eggs, well beaten
1 ½ c. sugar
1 ½ c. flour
1 ½ sticks of butter, melted
1 T. almond extract
Beat eggs together with the sugar. Add flour and mix well. Add butter and almond extract. Bake in a greased and floured 9×13 pan at 325 degrees for 30 minutes until lightly browned. Do not overbake. Sprinkle on confectioners’ sugar when cool.
