Recipe of the Month – Cream of Tomato Soup

This recipe comes from the State Line United Methodist Church Cookbook. Stateline is a small town that is truly on the “state line” between North East, Pennsylvania and Ripley, New York. This recipe is from Willa Morris.

CREAM OF TOMATO SOUP

1 teaspoon finely chopped onion
2 tablespoons butter
2 tablespoons flour
2 teaspoon sugar
1 teaspoon salt
Pepper to taste
2 cup tomato sauce

Sauté the onion in butter, stir in flour, sugar, salt and pepper. Cook until smooth and bubbly, stirring constantly. Remove from heat and gradually stir in tomato sauce. Bring to a boil, stirring constantly, and boil for 1 minute. Stir hot tomato mixture gradually into 2 cups of cold milk. Heat rapidly to serving temperature and serve immediately. Makes 4 servings.
