Recipe of the Month – Apple-Spinach Salad

The Fenton History Center has an extensive collection of local cookbooks in its archives. This recipe comes from the Abraham Lincoln Elementary School Cookbook, published in 2010. The cookbook featured recipes supplied by students and staff of the school, and was compiled and edited by the Lincoln Elementary PTA. This recipe was submitted by Alex Sharpe.

APPLE-SPINICH SALAD

Combine for dressing and whisk together:
¼ c. sugar
¼ c. apple cider vinegar
¼ c. vegetable oil
¼ t. garlic salt
¼ t. celery salt
Combine for salad:
1 6oz. package of fresh baby spinach
2 small Granny Smith apples, chopped
½ c. cashew nuts
¼ c. craisins

Serve the dressing with the salad. You can chill the dressing up to one day. Serves 4.
